Chickpea is an oldest legume. The chickpea is a 'good source of amino acids and is therefore a valuable and highly nutritious. The "Pasha" variety is a common variety in Sicily presenting the medium-sized seeds that remain intact after cooking. It has a very distinctive taste: the taste of "chickpea than once".
Excellent as a soup or as a side dish, not only as a condiment for pasta, they need to be "soaked" for about 8 hours, before cooking.
Medium in size it is a variety of very tasty chickpeas and great to use as a sauce for pasta, pureed as a side dish, base for many preparations or flour to be used to make the famous "panelle" in Palermo.
